If I recall correctly (and it's been a while since I've watched this so be warned), a huge source of conflict between her and Geum-young was that she had more tendencies to fall back on her rooted, eternal sense impressions to inform her of how to cook, enforcing these Te formulas stemming from them into her approach, all the while sometimes questioning some of Geum-young's attempts to be more visionary in her own approach. Geum-young came off as more obedient due to Lady Choi being her mentor figure, but her innate tendencies (that she shares with Jang-geum!) made both of them want to veer away and synthesize more "ideal" creations. However, Lady Choi's Ne did not seem subordinated to her Fi; she was still more comfortable and crafty in perceiving potentials to aid their mutual attempts to outdo Jang-geum and Lady Han. Both Lady Han and Geum-young come off as more reflective and contemplative of their inner values than Lady Choi does too.
