Going off letter dichotomy alone he has to be ESFx, I'm leaning towards ESFJ but I can see an argument for both. He is extraverted and gregarious. From his conversations with Shallan, it can be observed that he doesn't really understand or is interested in more intellectual (NT) topics. That doesn't mean he's dumb, Shallan is likely an intuitive, and Adolin isn't. He just thinks, "oh cool, she's smart and she isn't mean about it." So he has a higher sensing and feeling function and leads with his extroverted function. A major distinction between ESFP and ESFJ is whether or not they use Fi-Te or Fe-Ti. These are decision functions, so let's see what major decisions Adolin makes throughout the series. Adolin doesn't do much in the first book except flirt with girls and question Dalinar's sanity. He seems to tolerate his father's insistence that they should follow the codes just to entertain him. There wasn't much to him except being a decent person. In the second book we see more into his thinking. Adolin secretly hopes that his arranged marriage can go well because he had been unsuccessful with courting girls on his own. This seems to be more Fe-Si to me; I could see an ESFP dating a lot of girls because they want a lot of Se experiences and don't want to commit to anyone yet, but in Adolin's case he actually was trying his best with every girl, the reason they end up rejecting him is that Adolin is too friendly with everyone and the girls become jealous. He decides to trust in the traditional courtship arrangement his cousin sets up for him (high Si) and see if he can get along with this stranger he is betrothed to because his own efforts have failed so far. He also finds comfort in the rituals of burning glyphs and talking to his sword before duels, the traditions ground him before a fight. This seems like a Si user thing; they tend to like routine. At the end of WoR Adolin kills Sadeas. His justification for this is that Sadeas was threatening his father, him, and everyone else in his life. He was going to spread rumors and lies about Dalinar's intentions. He was a danger to everyone and should be eliminated. His reasoning seems more Fe/Ti than Fi/Te. Sadeas was going to try to kill them in the future so it was ethical for him to kill Sadeas preemptively, it was unlikely he would have another chance to get Sadeas alone, so it was the most objective decision. Dalinar, who is likely an Fi user, would argue, "journey before destination", it's not right to murder Sadeas even if it is the safest decision, you must be honorable in the way you go about justice.
