We must not forget that she is a THEORETICAL physicist, and that too one working in the most esoteric field possible (quantum gravity; also her PhD thesis was literally called "Black Hole Relics in Large Extra Dimensions"), instead of one where you can easily get experimental confirmation. A lot of her complaints against theories like the multiverse come from simply following through with the scientific method, as one should in the pursuit of truth. When she says string theory is useless, she doesn't disregard the idea itself but talks about the reality that it has gone on for too long without progress. Any theory of quantum gravity is bound to be too esoteric, she just wants new (esoteric) ideas for QG to be researched upon as well. And until she's Te>Ni, or INTJ with strong Te that filters Ni theories, she would entertain ideas but reject them if they don't 'serve' any purpose or don't follow the scientific method. In the flat earth video, I think her main point was that flat earther's argument is one based on trust in evidence that others have collected for you, and that's why it's not 'stupid'; I don't think an Se-aux would construct such an argument, they're more likely to dismiss it outright. And when Sabine does make dismissive comments it's literally always because she doesn't think its actually useful.
