I find it incredible to see what happens to a person when you shut down his dominant function for such a long time. Se is all about new experiences and Dae-su got nothing of that during those 15 years: same "view" (the prison), same activities (sleep an TV) and even the same food. When he was finally released he just had to activate his Se as fast as possible and as much as possible (picking fights with people, eating live octopus, etc.) since for an Se dom like him, the sensory exprience is the "base" for his life (true for every type and it's dominant function to be honest). That's why he may seem to have such low Fe. Dude was so hungry for those physical experiences he just didn't care for anything else.
