The best example of his Se-Ni is showcased during his conversation with his brother, near the beginning of the movie. When describing how food tastes to him, a series of symbols, flashing lights and moving symbols are shown on the screen to depict his sensory reaction. Instead of using concept correlations and wordy descriptions to describe the taste, he instead puts an emphasis on just its "feeling". He is very practical and prefers hands-on experimentation when it comes to figuring out clever food combinations (which is what makes him such a good chef) - Se. A yearning for achieving something "more" in the culinary field despite rat tribal(?) tradition could be mistaken for Inferior Si, but I believe it is more Ni (it's more a "vision"). He never asserts himself nor does he shoves his aspirations into the faces of his parents in any sort of attempt to obtain his goal (Not much Te). The circumstances just happen to be in his favour, and he stumbled upon an opportunity to pursue his dream.
