His dominant Si is so obvious. The scene where he tastes the ratatouille is really all you need to know. He liked the dish not because of how good it tasted to him in the moment, but because it reminded him of his mother's cooking, which is something he regards as very meaningful. And as has been said below, while anyone of any type can be wary of something because of a prior bad experience, the fact that Ego legitimately didn't think it was even possible for Gusteau's to change for the better shows how heavily he's repressing his Ne. He's also extremely organized--for instance, he's able to find his old review of Gusteau's restaurant in seconds due to his meticulous filing system. As to his enneagram, I think 1 fits better than 5. 5s are dispassionate and intellectual; Ego can come across this way but he actually isn't. He cares enormously about his area of expertise ("I don't 'like' food, I LOVE it"), and the whole reason he's a restaurant critic is because he wants to make sure that the food is done "right," according to his own exacting standards. This is why he's so ideologically opposed to Gusteau's motto of "anyone can cook."

The secondary antagonist. Ego is an infamously harsh food critic. Prior to the start of the story, he left such a scathing review of Gusteau's (and the chef's motto, "Anyone can cook") that it apparently killed Gusteau via a broken heart. When he catches wind of Linguini's talent, he sees an opportunity to once again write another unforgiving review.
