Very good demonstration of how the subjective and already existing mental content of Si is mashed into the raw experience. Ego didn't taste a bite of ratatouille, he tasted THE bite of ratatouille that brought a strong association with a past impression (his childhood) to the surface (Si > Se). Si doesn't percieve things in their itself, like Se does, but in the context of other impressions, and every new sensation is integrated into this "codex", in the end describing how the composition/structure of the world is. - Se: how THIS thing IS - Si: how THE thing GENERALLY is —> That's exactly the reason he didn't think the food will be good, not because of Ni, like @[Silver9] suggested. Ni is incapable of conjecturing about something, if it isn't based on direct perception (Se). In other words: Ni can't assume something that it didn't previously see, it just discovers what's behind things. Si on the other hand describes the general structure of reality (on a subjecive basis), so if Anton Ego's experience with Gusto was that it's mediocre, he WILL expect it to be mediocre again, and again. ISTJ is clear.

The secondary antagonist. Ego is an infamously harsh food critic. Prior to the start of the story, he left such a scathing review of Gusteau's (and the chef's motto, "Anyone can cook") that it apparently killed Gusteau via a broken heart. When he catches wind of Linguini's talent, he sees an opportunity to once again write another unforgiving review.
